Bits and pieces + recipe: raw beetroot dip

I think I’ve finally realised that staying home doing activities for the most part of the day is easier than spending 2-4 hours walking about outside. Be it the age they are or my loss of physical endurance but the chaos of being indoors can’t compete with the battle of stroller rejection and the agony of getting two toddlers, the day’s groceries and my sanity, up to the top of the hill on which we live. For the first time I’ve relaxed into living relatively idly, being a little more anti-social and relying less on the outside world for stimulation. I miss the exercise, I must admit and will have to find an alternative for it but for the most part, my time is used more productively despite taking on a slower pace.

Recipe: Raw beetroot dip

2 medium size beetroots, scrubbed clean but skin on

1 clove garlic

1/2 cup pine nuts

1-2 tsp salt

1/2 juice of lemon

1/4 cup olive oil (optional)

Food process garlic, nuts and salt. Add chopped beetroot and lemon juice and process until fairly smooth and creamy.
